Why buy flavored mayo at the store when you can easily make it at home. My sweet and spicy spread adds a delicious creamy “secret sauce” twist to burgers, sandwiches, fries and just about anything your heart desires. Originally created for my Grilled Tempeh Reuben, I always have a jar on hand and enjoy a dollop on just about everything! You can adjust the heat to your own taste. I like mine pretty hot, but feel free to use as much or as little of your favorite chili paste. For a delicious option, you may also substitute Wasabi or Chipotle pepper for the chili paste. Adding a few splashes of non-dairy milk turns this spread into a pourable dressing for potato or green salads…

Chili Mayo
Serves: Makes one cup
Ingredients:
- 1 cup vegan mayonnaise
- 1-2 tablespoons sweet relish (or more to taste)
- 1-3 teaspoons of hot Calabrese pepperoncino paste, Sambal Oelek or Sriracha.
Directions:
Combine all the ingredients in a bowl and blend well. Add the hot chilis in small increments tasting the dressing frequently, adding additional heat as needed.
Chili Mayo lasts for weeks stored in the fridge in a lidded jar.
